National Baking Day

My FB calendar tells me that Friday, 5/17 is National Baking Day. We don't have any "baking" product except for the Gingerbread Girl and the Gingerbread House so we decided a nice lime cookie recipe would work!





Lime Moon Cookies


1 c soft butter

¼ t salt

1 to 2 T lime rind

Green decorator sugar

1 c sifted confectioners sugar

¼ t green food color

2 ½ c sifted flour


Mix butter, sugar, salt, food coloring and rind thoroughly. Add flour and blend. Wrap dough in wax paper and refrigerate for 1/2 hour. Roll ¼ inch thick on floured surface. Cut into 2” circle – then cut in half – sprinkle with decorator sugar. Bake on ungreased cookie sheet 6 to 8 minutes in 375 degree oven. Cool.

Make mixture – 1 egg white – 1 t water – dip outside edge of cookie in mixture – then in color sugar. This makes the cookie look like the outside still has the rind on it.

Icing – 1 c sifted confectioners sugar, ¼ t salt, 1 T lime juice. An added flavor to the cookie!
