Happy Mother’s Day!


Grandkids #1 and #3 are visiting this week so the Blooming Daisies Crafts blog is on the light side. Light on content, certainly not on weight or calories, that is. This yummy Chocolate Pound Cake recipe is for you to make for yourself or a loved one. You can also forward it on as a (not so subtle) hint! Do not wait for a special occasion to treat someone you love—especially yourself.


While the basic Chocolate Pound Cake recipe can be found on multiple websites, it is the addition of the almond extract that takes this recipe up a notch. The pictured cake is glazed.


Chocolate Pound Cake

½ cup shortening

1 cup margarine or butter, softened

3 cups sugar

5 eggs

3 cups all-purpose flour

½ teaspoon baking powder

½ teaspoon salt

½ cup cocoa

1 ¼ cup whole milk

1 teaspoon vanilla extract

1 teaspoon almond extract


Cream shortening and margarine (or butter); gradually add sugar, beating until light and fluffy. Add eggs, one at a time, beating well after each addition.

Combine flour, baking powder, salt, and cocoa, mix well. Add to creamed mixture alternately with milk, beginning and ending with flour mixture. Stir in both extracts.


Pour batter into a greased and floured 10-inch tube or bundt pan, bake at 350 degrees for 75 minutes or until a cake tester comes out clean. Cool in pan 10-15 minutes and invert onto serving platter.


Chocolate frosting/glaze

2 ¼ cups sifted powder sugar

3 tablespoons cocoa

¼ margarine or butter, softened

3-4 tablespoons whole milk

1 teaspoon almond extract


Frosting: Combine sugar and cocoa, mixing well. Add remaining ingredients; beat until smooth.


Glaze: Combine sugar and cocoa, mixing well. Melt butter in medium pan over medium low heat. Stir in sugar/cocoa mixture (mixture will be thick). Remove from heat. Add almond extract and enough milk to reach desired texture. Mix until smooth.


The italic emphasis is mine. I do not know the science behind the “beginning and ending” with the flour mixture, but I do know that sifting is important to eliminate the white dots that can appear in the frost when you frost the cake.
